The College of Agricultural Engineering Sciences at the University of Baghdad recently held a PhD dissertation defense titled \u201cPreparation of Protein Isolate and Enzymatic Hydrolysates from Rice Bran, and Study of their Physicochemical Properties and Applications in Food Products,\u201d by the student Ali Joudi Shouna from the Department of Food Science.<\/span><\/h3>\n

The study aimed to prepare a protein isolate from rice bran, identify optimal conditions for protein extraction, and conduct chemical analysis of whole rice bran, defatted rice bran, and the protein isolate. Additionally, the study evaluated the amino acid content of the selected protein isolate and its enzymatic hydrolysate.<\/span><\/h3>\n

The researcher recommended utilizing rice bran as a byproduct of rice processing to fortify food products and make use of its components in nutritional and therapeutic applications. He also advised investigating the effects of rice bran, its protein isolate, and extracts on the therapeutic properties related to certain vascular diseases, as well as its impact on liver function, blood sugar levels, and more.<\/span><\/h3>\n
