In the College of Agricultural Engineering Sciences at the University of Baghdad, the defense of the doctoral dissertation entitled “Functional Properties of Bovine Elastin Analyzers and Their Applications in Extending the Shelf Life of Red Meat” was conducted by the student Ghofran Mansour Mohammed from the Department of Animal Production.
The study aimed to evaluate the effectiveness of elastin extracted from bovine skin as natural antioxidant materials, as well as to assess the activities of elastin analyzers as natural antioxidant materials and to demonstrate their impact on the qualitative, microbial, and sensory properties of minced meat stored under refrigeration.
The researcher recommended the possibility of extracting elastin protein from various sources for its proven laboratory advantages, as well as the use of elastin analyzers as effective natural antioxidants in meat production. It was demonstrated that elastin analyzers can be used in the manufacturing of meat and its products due to their effective impact in reducing oxidation.
