The study aimed to utilize local quinoa seeds to produce flour for use in manufacturing complementary food mixtures for children aged 1–3 years. This was achieved by gradually replacing wheat flour with quinoa flour, while evaluating the sensory, chemical, and microbial properties, as well as its biological effects on growth and health.
