Nadia Farid Hassan from the Department of Food Science successfully defended her Ph.D. dissertation entitled “Physicochemical, Functional, and Manufacturing Properties of Starch Isolated from Local Millet.”
The dissertation aimed to evaluate the effects of millet starch extraction methods and manufacturing processes on its physicochemical, functional, and thermal properties, with the goal of producing starch with improved functional and health-promoting properties.
The researcher recommended that alkaline extraction achieved the highest yield and purity, while manufacturing treatments caused significant changes in the structure and functional properties of the starch.
