Mustafa Adnan Odeh from Department of Animal Production successfully defended his M.Sc. work with the title (Study of some chemical, microbial, and sensory characteristics of meats from some local and imported fish in Iraq)
The study measured the moisture, protein, and fat content in fish samples. It also assessed spoilage indicators such as peroxide value (PV) and thiobarbituric acid reactive substances (TBARS), and examined free fatty acids (FFA). Additionally, the research addressed physical properties, including weight loss and water-holding capacity (WHC) of the meat
The results showed a clear variation in the quality of fish between local and imported products. The researcher advised consumers to avoid purchasing damaged or bulging cans. He also called on importing companies to choose factories that use modern canning techniques. Additionally, he suggested conducting further studies on the effect of storage duration on the nutritional value of canned fish.
