Amir Salem Abdul-Ridha from Department of Food Sciences successfully defended his Ph.D. work with the title “Nutritional Value and Protective Effects of Carrot Seeds on Health Indicators in Rats”

The study aimed to identify the chemical composition of selected carrot seed varieties and to determine the optimal conditions for extracting bioactive compounds from the seeds of the chosen varieties.
The researcher recommended conducting further studies on other imported carrot seed varieties, as well as investigating the potential use of their biologically active components in lowering blood pressure and treating cancer. He also suggested utilizing carrot seed biotin isolates and their hydrolysates in the production of specialized foods for patients and athletes.
